If there are some acids that may effect a better taste then  then can phosphoric acid be used or for that matter any acid to activate the sodium chlorite?

No claim to be an expert here but you could go the CDS route instead. This allows you to discard the bad tasting reagents. I plan to add a drop of Sodium Chlorite to the finish product to boost the secondary reaction. 
I will almost jokingly say that I have created a new protocol I call CDS++. I start it Monday, I can let you know how it goes!!!
