I have found ta splash of red wine in the solution after you add water, pretty much does away with the horrid taste...just a splash does it

Have you tested with CLO2 test strips to see if the wine neutralizes the CLO2?
Shhh

What about Ginger Bug or Kombucha? Can that be used?

My guess is that you are using 50% citric acid to activate MMS (22.4% SCS). (Yuk!)
If you change activators to 4% HCL I am sure the "horrid" taste will go away.
Yes, its that simple.
You could also add a few drops of SweetLeaf brand Stevia drops for a delicious MMS experience.
They will not reduce the CLO2 content of your refreshing drink.
